We offer a wide array of distinctive beers. In part we brew famous but hard to find styles of beer such as Doppelbock or Belgian style Triples, but we also push the limits with Double IPA and spiced European style wheat beers. Give me beer with flavour: malt or hops, or malt & hops, or no malt or hops, but orange peel and spices -- Just beer with flavour.

Our beer is also bottled in dark amber glass to avoid light damage, and our custom printed caps are the finest oxygen barrier caps which help provide excellent shelf-life. Still unpasteurized beer should be stores cold, but consumed not quiet so cold.

We are also proud to offer those who want to make these types of beers at home a selection of the finest malts from around the world, fresh hops, pure yeasts. As a supply store we share the diversity and freshness that spins from our own brewing needs.

Some of our brewing production gets packaged in ReadyBrew kits, which are sold at our brewery, and in several Wine Kitz stores in SK & AB.. We make our kits fresh from the grains, just as we would for our beer. All you need to add is yeast.

WHO is Paddock Wood?

Paddock Wood Brewing was started in 1996 by Steve Cavan as a home-based mail-order only business (mostly to feed his hobby and passion for brewing), but is now a private corporation with 39 shareholders. Steve is now the President and CEO.

cavanSteve Cavan is an award winning brewer, BJCP judge, and professor of Classics and Philosophy (sadly retired from teaching April 2006 to devote his energies to Paddock Wood). He brews a superb bitter, and a heavenly dopplebock. His enthusiasm and expertise have revolutionized many home brewers' approach to their craft. Steve's personal motto "Life is too short to drink bad beer" drives the excellence in all Paddock Wood products and in Steve's fine beer.

 

 

brandiBrandi Cadrain is our retail manager. Brandi will likely answer your phone calls and prepare your mail orders. She knows how to handle the messy SLGA paperwork for special beer orders, and will steer you through the dozen or more types of beer we usually have on hand (in case you are not sure what type of beer you would like).

 

 

jayJay Cooke is our new Head Brewer. He grew up in Regina , did a B.Sc. at U of S here in Saskatoon, studied brewing at Siebel in Chicago and Doemens Akademie in Munich, Germany, then capped that with 2 years of brewing in the USA.

How Do Brewers Use Hops?

Hops are an important aspect of beer. They provide bitterness to balance residual malt sweetness, and a bitterness which can add a dry aspect to the finish. Hops also contribute flavours and aromas that are crucial to some styles (and not to others). Bitterness comes from alpha acids which need to be boiled in order to form stable, long lasting bittering chemical. This process of stabilization takes time, usually 30 to 90 minutes for good boiling action, during which the flavour oils are diminished. So by adding extra hops late n the boil, a brewer can boost flavour aroma profile, should that be appropriate for the style of beer.

Commonly used hop varieties

Lager hops: we tend to use European aromtic hops with low bittering power. They impart more flavour oils than high acid hops. Czech Saaz, German Spalt & Hersbrucker are most commonly used in our brewery for lagers. These often add floral or spicy aspects to the beer.

Ale hops: we reach for either British hops such as Target & Challenger, or sometimes Progress or Bramling Cross (East Kent Goldings crossed with a wild Manitoba female - hw could we not use this one?). These often add fruit notes such as orange from Challenger, or Blackcurrents from Bramling Cross. We migt also grab classic American hops such as Cascade for its grapefruit flavour, or Warrior for a big acid kick.

WHAT is that castle-thing in the Paddock Wood logo?

Those odd-looking buildings with conical roofs and distinctive caps are Kentish oast houses -large kilns for drying hops. Oast houses are widespread throughout the countryside of County Kent, England, an area renowned for its fine hop production.

We use the oast house in our logo to reflect our commitment to providing high quality products in the tradition of the Kentish hop growers.

WHERE is Paddock Wood?

Paddock Wood Brewing is located in Saskatoon, central Saskatchewan, Canada.

Our retail outlet is located in the Sutherland Industrial Park, at 116 103rd Street just off Central Ave, behind the "Scrap It!" store, close to ABC Fire Extinguishers. Come in and visit us! If we have time, we'll even give you a tour.

Our namesake town Paddock Wood is located in the hop producing area of Kent, in England. Like Paddock Wood's hop growers, we insist on the highest quality in all our products, so you can make great beer.
